Best Banana Bread Blondie Bars
Banana Bread Blondies are delicious snack, lunchbox treat and the easiest and the tastiest dessert ever.
I thought combing two of my favorite treat, banana bread and blondies, would be great. And guess what! I was right, it turned out better than I expected!
Banana Bread Blondies have rich and sweet flavor of banana bread but with fudgy, moist, rich and dense texture. If you are looking for some cakiness of banana bread, you won’t find it here.
So technically, these yummy bars are more like traditional blondie base just with banana mix in. But I called them “bread’ anyway. It’s because of the flavor.
Banana Bread Blondies with Brown Butter Frosting
And since I called them ‘bread’ I don’t see why these blondies couldn’t be a breakfast, too?! They are perfectly suitable breakfast in my opinion.
I know that a lot of sugar is not quite healthy breakfast, but I can’t resist. So sue me! I like to eat them for breakfast! You can make them without the glaze if you’ll feel less guilty about it.
Actually these Banana Bread Blondies are great on their own, even without the brown butter frosting. They are already sweet and flavorful. They have amazing, rich flavor combo of banana, brown sugar, cinnamon and vanilla.
Sometime I like to make them without the topping, especially when I need quick and easy snack or dessert. But I like to add a glaze to make them look fancy for some special occasion or a party.

Ingredients
For Blondies:
- ½ cup unsalted butter-melted
- 1 cup light brown sugar
- 2 teaspoon vanilla
- 1 large egg
- 1 ½ –2 teaspoon cinnamon (to taste)
- ¼ teaspoon salt
- 1 cup flour
- ½ cup mashed banana (one medium-large banana)
Frosting:
- ¼ cup butter
- 6 Tablespoons light brown sugar
- 2 Tablespoons milk
- Dash of salt
- 1 teaspoon vanilla
- 1 cup powdered sugar
Instructions
- Preheat oven to 350 F and line 8 x 8 inch baking pan with aluminum foil (leaving an overhang on the sides to lift the finished blondies out), then spray with cooking spray , set aside.
- For the batter, in a medium bowl mix together melted butter, sugar and salt. Add egg vanilla and cinnamon and mix until well combined, then add mashed banana and mix to combine.
- Next, add flour and mix until combined and smooth, too. Pour the batter into prepared pan, smooth the top and bake for 25-30 minutes, or until center has set. Remove from the oven and allow to cool to room temperature.
- To make the frosting, in a medium sauce pan melt the butter and continue cooking over medium heat until reach nice amber color, stirring constantly(be careful not to burn it). Then, add brown sugar, milk and a dash of salt, stir and bring to boil. Remove from heat and cool for 10-15 minutes.
- Whisk in vanilla and powdered sugar and spread over the blondies. Allow frosting to set before slicing and serving.

I have made this recipe EXACTLY as printed above & it is awesome !I DO have 2 questions though … 1) Can I whip this frosting ? to get enough to frost & fill an 8 or 9 inch cake?

Thanks Theresa. I haven’t tried to whip this frosting so I can’t help you about that. And about the chocolate version you may try to substitute some of the powdered sugar with cocoa powder or sweetened cocoa powder, but I haven’t tried that either so I’m just guessing. If you try let me know how it goes.
I doubled the batch, added chocolate chips at the end. For the icing, I just bought cream cheese frosting and mixed it with cocoa powder. Decadent and amazing!

Linda they have no baking powder or soda so will not rise. I made a double batch but put all in all 9×9 pan. Awaiting results!

Just made these and they are ridiculously insanely good!!! I added an extra half a banana just because I was afraid they wouldn’t be banana-y enough for my taste. I thought the recipe made too much frosting once I was done whipping it up so I didn’t use about a quarter of it… but now that I’ve had a blondie I will definitely use the whole batch next time. These are the best banana ‘brownies’, and I have tried many recipes! The texture isn’t quite a brownie but definitely not a cookie, cake or bread! I followed the instructions, which is highly unusual, and they were moist, chewy, banana-y and perfectly sweet with the browned butter frosting. I will definitely be making these again and I won’t add a thing. I think it would detract from the total ‘brownie’ effect. Thanks four the perfect recipe. It’s just the one I have been looking for!

These are really good. I made them according to recipe. My husband and I both really like them, although he suggested I add chocolate chips next time. I think they would be good with toasted chopped pecans on top.
I came to the comment section to see if it was really necessary to line the pan with foil, as every banana blondie recipe I looked at said to do that. No one mentioned it either way, but I did not use foil, as I felt it would be wasteful. I just greased the pan and they turned out fine.

Do I let the batter part cool before adding frosting? Or add it on right away?
I added a half a teaspoon of baking powder and they rose/weren’t so dense. I also used dark brown sugar for a richer taste
I am not sure why it didnt rise. I saw a couple of other people with the same question but no reply. It tastes good but 1/2 inch tall. Would live to know since I followed the instructions.
The picture and the results are Definitely NOT the same. I followed the recipe exactly and though it is flavorful, it was very flat. There has to be something missing from the recipe because this came out like fudge bars. Perhaps you should read over what you posted. I also see I am not the only person with the same complaint. Perhaps this needs baking soda and/or baking powder to come as what you show in the picture.
As with other comments, these look nothing like the picture, did not rise art all, are about half an inch high, have not tasted yet bjt seem they will be quite gummy, something is missing.
What type of flour are you using? Would self-raising work? Do I need any raising agent?

I have made this recipe over a half dozen times and my family loves it! 3 of those times has been just since the quarantine started. I double the recipe and add extra bananas. I also add chocolate chips on half to please myself and my daughter. I have not used the frosting as I think it is perfect as is! In reading comments, I’ve never been concerned about it not rising. I see this more like a brownie rather than a bread. Thanks for this great recipe!

Delicious! My icing is much darker in color and has much more of a caramel flavor vs brown butter but they are so good. Definitely a keeper for me! I did use heavy whipping cream instead of milk and had to add an additional tbsp when adding the powdered sugar to make the icing smooth.
I rarely eat bananas and have tried to find a way to mix it into my cooking, I’ve tried banana muffins and they were okay, but this recipe is golden, I’ve already made it twice within a week. I made these exactly to the recipe except I used gluten free flour. I had to bake them about 15 minutes longer, but they turned out fantastic!
Holy bananas are you KIDDING ME? I made this for an emergency house party dessert, because I only had a limited amount of time and brown bananas. They are insanely delicious. We are gluten free, so I subbed King Arthur gluten free flour with no issues. I also added about 2 tsp of bourbon for giggles.

This recipe is delicious never going to make plain banana bread again! The blondies are so much better and I’m not really a huge banana fan just needed a recipe to use up over ripe bananas.

For all the comments on using baking agents….
brownies and blondies do not have baking agents. That’s what makes the decadent. If you add baking agents, then it’s considered cake.
